How to cook: "Migas Manchegas"

Hello my friends!!

In my first post I'm going to show you how to cook a typical Spanish food, far away from the well known "Paella".

I recently met a very good friend called Ivo, from Netherland, and he want to learn how to cook it.
We cooked for him the most important dishes we eat, I mean, the food our parent, my grandparent, ....

A bit of History

This is an old, old recipe that was used by the shepherds long long time ago. At this time, they only had access to the bread once a week, or two weeks, then when the bread was hard, they used to get the most of the resources, and never never throw food.


The Result

This is the result of "Migas Manchegas":


Well, let's go with the recipe.

Ingredients for 4 people:

- 6 or 7 Garlic branches
- Eggs
- Hard Bread
- Paprika, Salt
- Green and red pepper
- Oil: Best is olive oil from Spain
- Meat: Chorizo, Bacon


Steps:
1.- First step is cutting the bread in crumbs. The size of each one have to be a bit bigger than a cheakpea. You can use a knife. This is the result:




2.- Put oil and the garlic in the pan, fry them until they became brown:







3.- Take off the garlic and fry the pepper until became soft. Use the oil of the previous step.





4.- Now Its time to fry the meet. Use the oil of the previous step.






5.- You can see we fried peper and the meet, not it's time to join the garlic and put the hard bread:

6.- Stir everything until the bread absorb all the oil. This is an important step, be patient in this process.




7.- Spread with salt and paprika.





8.- Blend, blend more...... almost finishing



If your cooking is similar to this, It's OK. Add 2 Bay leaves


9.- And the final step.... Fry an Egg



And this is the result:



Eat with wine or beer..
